Almond Meal Pancakes
Are you looking for a quick and easy breakfast? Are you looking for a recipe your kids will love and you can make in a matter of minutes? Well I’m about to give you a recipe for almond meal pancakes.
Ingredients
1 banana
2 eggs
1/2 cup almond meal
Yes that is all you will need for these delicious pancakes.
Method
Whisk eggs and add to almond meal. Here is a good whisk – Norpro 3 Piece Stainless Steel Balloon Whisk Set
Mix in mashed banana
Heat up a fry pan and grease will a little coconut oil or butter.
This recipe yields around 6 medium pancakes

Paleo Lemon Tart
Ok guys I know you have all been waiting for this one. I made it the other night and if you love lemon tart you will love this version. If you need some more paleo recpe ideas you will find them in Paleo for Beginners: Essentials to Get Started
Ok so for the base you will need,
3/4 cup coconut flour
1/2 cup melted butter
1 tablespoon honey
2 eggs
1/4 teaspoon sea salt
1 tablespoon lemon zest
As per normal combine wet and dry ingredients separately and then combine together. Sometimes when I am feeling lazy and I just combine them all together to start with.
So this is going to turn out quite runny, if you like to thicken it you you can add some dessicated coconut.
Ok so grease a baking pan with butter and pour the mixture in. Cook in a 200 degrees oven for around 10 minutes. You can put it under a grill if you want the base to be crispy but I didn’t bother.
Right so while that is cooking you will want to combine the ingredients for the filling. You will need,
3 eggs
1/2 cup melted butter
1/2 cup honey
1 tbsp lemon zest
1/2 cup lemon juice
Ok so whisk all the ingredients together. One the crust/base had cooled poor toping and and put in oven for around 15-20 minutes. Once it comes out of the oven top with strawberries and put in the fridge.

Bacon Wrapped Paleo Meatballs
Who loves bacon? Isn’t everything better with bacon? I think so. Here is my favorite cookbook about bacon at the moment- Fifty Shades of Bacon
Anyway these meatballs can be adapted to your taste. Below is the ingredients I used in mine
1 kg of lamb mince
1 large chopped red chilli
1 cup of almond meal
mixed herbs – basil, parsley and thyme
2 eggs
salt and pepper
10 rashers of bacon
Method
1 – Combine all ingredients (except bacon) in a large bowl and combine together
2 – Roll into around 20 meatballs (around 10 if you only use 500grams mince)
3 – Fry off in a frypan until they are browned all over
4 – Cut the bacon in half.
5 – Once the meatballs have cooled a little bit, wrap with bacon and secure with a toothpick and place in a baking dish
6 – Cook for around 30 minutes at 180-200 degrees
7 – Serve with some vegetables on the side
The best things with these meatballs is you can add or takeaway anything you like. With 1 kilo of mince you don’t get any heat off the chilli, just an nice addition to flavor. Also if you like you could fry off the bacon first but I think it may dry it out to much. The bacon comes out nice and crispy after 30 minutes in the oven.

Paleo Zucchini Slice
Ok so last night I made this yummy paleo zucchini slice. It is a really simple recipe and can be made in a matter of minutes. As I have said in previous posts you can make your own almond meal/flour by just grinding up some raw almonds in a food processor. Here is Australia if you buy 400 grams of almond meal at the supermarket its around $12. I can buy a kilo of raw almonds for the same price. So if you are going paleo long term it is worth investing on a little food processor. You can normally get a cheap one for under $50.
Ok onto the recipe
INGREDIENTS
2 large grated zucchinis
1 large grated carrot
6 eggs
1 onion
1 & 1/2 cup of almond meal
5 rashers of short cut bacon
1 teaspoon cinnamon
mixed herds (can use curry powder, moroccan etc)
salt and pepper
METHOD
1 – preheat oven to 200 degrees
2 – cook off chopped up bacon and onion
3 – combine grated zucchuni, carrot, almond meal and eggs
4 – tip in cooked bacon and onion
5 – add herbs and spices
6 – combine and tip into a lined baking tray
7 – cook for 25-30 minutes
Ok so it doesn’t get much easier than that. If you don’t really like it tasting to nutty you can only put in 1 cup of almond meal and 5 eggs.

Paleo Blueberry and Chocolate Muffins
Here is my recipe for my blueberry muffins. The chocolate is optional but I included it as a treat. It was 85% dark chocolate bits that I put in my muffins. As I have mentions previously we have friends over every Thursday and it’s always nice to share some dessert together and a cup of tea. Since I have started paleo it has been really hard to make nice desserts that still conform to paleo. I guess I could just give them carrots sticks every week
but I also enjoy cooking and watching other people enjoy eating my cooking.
Ok so you will need,
1 cup almond paste
3 eggs
1/2 cup Honey
1/3 cup Coconut Oil
1 cup almond meal aka almond flour
1/3 cup Shredded Coconut
1 teaspoon baking powder
pinch of salt salt
pinch of cinnamon
1 cup fresh blueberries
1/2 cup choc chips (optional)
Ok here is some quick tips for you. You can make your own almond meal by chucking some raw almonds in the food processor and grinding down to a fine powder. This is much cheaper than buying almond meal/flour. I’m not sure how to make almond paste but you can buy it easily in any supermarket. In some countries it may be known as almond butter.
1 – Preheat oven to 180 degrees.
2 – Mix all dry ingredients together in a bowl. Now add in honey, almond paste, eggs and coconut oil. Mix until all ingredients are well combined. The mixture will be quite runny.
3 – Mixture makes enough for 12 muffins. Line a muffin tray with paper liners and pour in mixture.
4 – Bake for 20-25 minute
I served to my friends with a dash of cream and topped with cookies and cream ice cream. Yes unfortunately the cream and ice cream is not paleo so if you are doing paleo you will just have to be content with a yummy muffin.

30 Day Paleo Challenge – Day 26 Results
So day 26 of my 30 day paleo challenge. Wow it is really hot in Perth at the moment, going through a mini heatwave with the last couple of days sitting around 40 degrees (104 Fahrenheit). It is also the start of a new school week which means trying the wake the kids up and get them back into school routine after the weekend.
As I make my sons lunch I feel like my energy levels have dipped a bit. Maybe it’s the heat or maybe it is my body recovering from the shock of pizza and ice cream. I decide to jump on the scales and see if the pizza and ice cream are going to haunt me two days in a row. 94.4kg so that is a loss of 200grams, so that is a relief.
I would really like to go for a ride on my bike today but decide it is way to hot. The more I think about the more I think doing the 30 day exercise challenge + 30 day paleo challenge all wrapped up in one the more I like it. I am looking to get down to between 80-85kg so hopefully I can do this in the next 30 days.
So with the school rush, lack of energy and oppressive heat breakfast today is a peach and some cashews. Not the best but is better than nothing. I really need to consider making something that I can quickly grab and go on school mornings. If you have any recipes I would love to hear them in the comments.
So onto lunch and today I am at my parents house around lunch time so mum makes me lunch. A lovely fresh salad served with tuna. My mum is also attempting paleo and has so far lost a couple of kilos.
The more I learn about paleo the more I want to help people who are carrying a few extra kilos. Maybe by writing about how I have been able to lose a few kilos and stay away from sugar will motivate people to give the sugar up for a month. Even if its not the 30 day paleo challenge, I think people would see dramatic results in giving up sugar and junk for a month.
Paleo Bacon and Egg ‘Muffins’
As promised on What’s For Dinner here is my recipe for bacon and egg ‘muffins’.
You will need
12 rashers of Shortcut Bacon
500 grams beef mince
1 punnet of cherry tomatoes
12 eggs
Salt and pepper
To Make
1 – Grease the muffin tin with butter or cooking spray
2 – Use bacon to line the muffin tray.
3 – Cook off the beef mince with the tomatoes
4 – Place a portion of mince and tomatoes on top of the bacon
5 – Crack an egg on top of the mixture. Make sure you don’t put in to much mince mixture or your egg will not fit.
6 – Place in an oven at 180 degrees and cook until the egg is to you liking. I cooked mine to hard yolks which took around 25 minutes.
7 – Serve with homemade tomato sauce.
Ready to go in the oven.
Ready to eat.

30 Day Paleo Challenge – Day 25 Results
Ok guys so as you may or may not have read I had a bit of a bad day yesterday eating pizza (gluten free, still not good though) and ice cream. So I guess the two questions you may have for me today are 1. How do you feel and 2. What do you weigh. So I guess lets get the weight one over and done with………………… 94.6kg. Not too bad I was expecting worse. How do I feel? Tired. It is really hot here in Perth at the moment but I feel unusually tired this morning. The last couple of days I have also really not felt like eating breakfast and today is no different. If fact I feel like going back to bed.
So what can you conclude from my pizza and ice cream yesterday? Yes if you are doing no exercise you will put on weight. Yes you will wake up the next day and more than likely have no energy. So what will I do when I have finished my 30 day paleo challenge? Will I give up pizza and ice cream for good? Yes.
HAHA got you right. There is no way I am giving up pizza and ice cream and wonderful lollies for good. What I have found is they taste even better when you only have them occasionally. I will continue on eating paleo, but if we end up down the beach and buy pizza for tea I am going to eat it and enjoy it. Particularly if I am exercising there is no need not to let yourself have a treat every so often. You just feel bad when you are doing the 30 day paleo challenge I guess because you want to try and go the whole 30 days.
Ok so back on track. Yes I’m tired today but I finally eat up the energy to make myself a very late breakfast. Ok we might as well call it lunch.
Good old steak and eggs
Ok so this keeps me filled up right through to dinner. Dinner tonight is lamb chops with roasted vegetables. I ask on What’s For Dinner how I should cook them?
I decide on the best way to cook them is to seal them off in a fry pan, get a nice colour on them and them put them in the oven at 180 degrees. I leave in them in the oven for around 45 minutes. They come out nice and tender. Served with oven roasted cherry tomatoes, pumpkin ans sweet potato.
It’s amazing that my kids will eat raw cherry tomatoes by the punnet but they didn’t like roasted cherry tomatoes.
So that’s day 25 of my 30 day paleo challenge. Feels good to eat good after my bad day yesterday. Will be interesting to see if I have put on anymore weight tomorrow. Once again I am still thinking of exercise but have done nothing yet. Maybe I will do and 30 day paleo + exercise challenge after I finish this 30 days.

Skintervention Guide: Purely Paleo Skincare by Liz Wolfe
Ok guys I haven’t personally brought this product because I don’t suffer from bad skin. This is not a review but what I can tell you is I have read a lot of reviews on this book and the reviews are all positive. I am only recommending this because I realise there are alot of people out there that suffer with bad acne and other skin problems and they may not realise such a product exists.
Also from my personal experience in under 3-4 days of eating paleo my asthma has cleared up. I used to have my asthma puffers multiple times a day. In the last 24 day of eating paleo I have used my puffer 3 times. So imagine what this guide will do to you skin.
I believe the price is $37. Not much of an investment if you consider how much all these ‘miracle’ cures cost. If you wish to find out more click on the link below
30 Day Paleo Challenge – Day 24 Results
Well today is Saturday in Australia and it is day 24 of my 30 day paleo challenge. I weigh in and I’m 94.2kgs which means a loss of 3.6kgs in 24 days and the lightest I have been. Still no exercise but I am feeling and thinking about it more and more. I’m not sure if crossfit is calling me back or if I should just try a normal gym. Probably I should just stop talking about it and just do something ![]()
It has been a very busy week with my son doing his first full week of full time school. I have a bit of a sleep in an motivation is at an all time low to get up and make some breakfast. Even with the scales giving me good news I am feeling exhausted today.
I decide to join Pinterest today and start sharing photos of food I am eating. I’m not really sure how it works at the moment but I will persist. As I on the computer I also find a blog about primal/paleo eating. It’s called marksdailyapple.com So this are the two new things I am doing on the world wide web.
So after a bit of time on the computer I finally decide to make some breakfast. I pull some sausages out of the fridge and decide to cook them with some eggs, tomato and avocado. The sausages are a new brand I decide to try and are beef, carrot and onion. Once they cooked I try them and decide not to buy them again.
Does breakfast motivate me. Not really and I’m going to blame the sausages. My wife then comes home from the shops with donuts and this is where the day starts to go downhill. I have a bite out of one of the donuts and it tasted amazing. I don’t have anymore, watch a movie with the kids and then it is almost time for dinner. Yes my breakfast was more like lunch.
Ok this is where my day really falls apart. We decide to go for a drive and grab some dinner, I am planning to grab a steak or something for dinner. That is until we decide to get pizza for dinner. The only saving grace is its a gluten free base (yes still bad I know).
We live close to the beach so we decide to go sit down the beach and eat the pizza and watch the sun go down.
Ok so after I had some pizza, a bite of a donut you think I would be feeling sick? But no on the way home I decide to buy an ice cream. Oh dear what a bad day.
So tomorrow I dread stepping on the scales. Getting back to exercise I think I really need to do something because I think my sugar craving will probably never go away. So after I have done the 30 day paleo challenge, if I do have a bad day like this I don’t have to worry about it because I will be doing exercise.
I am still happy that I have gone 24 days doing paleo and only had two day where I have been naughty. Today and about 10 days ago when I had an ice cream. Not making excuses but before I did paleo it was so easy for me to have ice cream every night so I am proud that I have only broken twice during 24 days
So today I really fell off the paleo wagon but tomorrow I am getting straight back on and really pushing hard for the last 6 days.
